hanukah latkes!

Just in time for Hanukah (starting December 1st!) I found this simple latke recipe from chef Missy Robbins (A Voce, New York City)

Ingredients:  3 large Idaho potatoes, 1 large onion, 2 eggs, 2 TB all-purpose flour, 1 tsp kosher salt, pepper

Directions:  Grate potatoes andonion, place them in a colander and squeeze vigorously to drain liquid. Mix with eggs, all-purpose flour,  kosher salt and pepper to taste.   Mix, form into patties and fry 2 minutes on each side. Chef’s choice: Canola oil
