Lime Bars

These yummy lime bars I found on momologie.com are so easy that even your kids can help make them!

Ingredients:
1 ½ Cups Plus 1 Tablespoon All-Purpose Flour
½ Cup Powdered Sugar, plus extra for dusting
¼ Cup Butter, cut into pieces, room temperature
4 Eggs
1 ½ Cups Granulated Sugar
1 ½ Cup Fresh Lime Juice
1 Tablespoon Lime Zest
3 Lime Slices, quartered

Directions: Preheat oven to 350°F.

Combine 1 ½ cups flour and ½ cup powdered sugar in a large bowl.  Add butter and cut in until the mixture resembles coarse meal.  Press mixture into the bottom of a 7x12x2-inch baking dish.  Bake until golden brown, about 20 minutes.  Remove from oven and maintain oven temperature.  Beat eggs, sugar, lime juice, lime peel, and remaining 1 tablespoon flour in a bowl to blend.  Pour onto the crust.  Bake until the top layer is set, about 20 minutes.  Allow to cool.  Cut into 12 bars, sift powdered sugar over the top, and garnish with lime slices.
