whoopie pies!!

According to the NY Times Food section last Thursday (March 18th) Whoopie Pies are having their ‘moment’! This fun & yummy treat is a favorite of my kids who loved making this recipe (and thought they were much better then the Oreo Cakesters they like at the market!), the recipe is adapted from Zingermans Bakehouse in Ann Arbor (which is an awesome place to visit if you are ever in the neighborhood)
Time: 1 hour
FOR THE CAKES:
1/4 pound (1 stick) butter, at room temperature
1 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 teaspoons baking soda
1 teaspoon sea salt
2 cups all-purpose flour
1/2 cup cocoa
1 cup buttermilk

FOR THE BUTTERCREAM FILLING:
3 large egg whites
3/4 cup sugar
1/2 pound butter (2 sticks), at room temperature
3/4 teaspoon vanilla
1/4 teaspoon sea salt.
